Why aren't you allowed to remove the tags from mattresses and such?

You can. Just not if you are a proprietor who is selling the mattress. Once you purchase it, get it home, roll around in it, the mattress tags are yours for the ripping. The tags exist to inform you - the consumer - of the materials used to make the mattress. By law, the manufacturer must disclose what the mattress is made of.

At one point, mattresses were made with some questionable materials (Naturals fibers that provided a nice and cozy home for all manner of creatures such as the ever popular lice. Mmmm lice.) then treated with nasty chemicals (that supposedly killed off the creatures, but let's be honest, that didn't really work.) The government finally stipulated that tags be placed on the mattress that clearly stated what was used so consumers could make an informed decision. Then, because if you were a mattress salesperson and your lice filled mattress wasn't flying off the shelves like you'd hoped, (They could have marketed it as a non-electric massaging mattress. millions of tiny feet massaging your back!) the threat of punishment for perhaps hiding the lice from the consumer dissuaded you from removing the tags. But hey, if you like lice and harsh nasty chemicals, you could buy the mattress, get it home, rip off the tags and show all your friends what you got!

Think of it this way. When you go to the grocery store, they have to sell you the pop tarts in the box, so you can read about all the delicious chemicals you are about to ingest. They can't just rip the package open and sell you a 2 pack of pop tarts in the delightful foil package. But you can open the package when you get home and line up all those foil packets in the cabinet. Your  own private little pop tart store!
